The Process:

As a child, ice cream mochi was a frequent staple in my household. Some American grocery stores have ice cream mochi, but only as I got older have I been able to try the other types of mochi that exist in the world. Mochi is filled with a variety of fruit and soybean pastes, but these types are only available from Asian markets and vendors. However, while ice cream mochi are packed with sugar and marketed as desserts, mochi with other fillings are extremely healthy snack options.

One of the main appeals of mochi to me as a child were the bright colors, the gooey texture, and how fun they are to eat. To know that I could have been having mochi all the time as healthy snacks, rather than once in a while as a dessert, was mind blowing. Miko mochi is filling that gap in the marketplace by providing mochi as an accessible snack option for American children.
